Processors - Dual core or Quad core?

Hello. Im making a new gaming rig and I had two processors in mind.
First is an Intel Core 2 Duo E8600 Wolfdale 3.33GHz.(6MB Cache)
Second is an Intel Core i5-750 Lynnfield 2.66 GHz.(8MB Cache)
I know right off the bat that the Dual Core is probably going to be better for gaming right now, seeing as most games will prosper from two high GH cores, rather than four low ones.
Is it really that much of a difference between the two in gaming?

Also, I wanted to make some videos of me playing the games, using video capture software (Fraps or Hypercam). Would the quad core be more beneficial than the dual core doing this? Or will the more GHz on the dual still be better.

One last thing - what is the key component to have in making videos? Thanks in advance.
